A spring-ier twist on traditional pesto, using the season’s best ingredients like fresh mint and chives. Parsley softens the brightness of the mint, and toasted almonds add a creamy texture to this versatile condiment.
INGREDIENTS
1 ½ cup packed fresh mint leaves
½ cup packed fresh parsley leaves and soft stems
¼ cup chives
¼ cup slivered almonds, toasted
Zest from one lemon
1 tablespoon lemon juice
1 garlic clove
Kosher salt
Freshly ground pepper
½ cup olive oil
INSTRUCTIONS
Using a food processor, blend mint, parsley, chives, almonds, zest, lemon juice, and garlic and until finely chopped, scraping down the sides of the container when necessary.
Season with salt and pepper.
While machine is running, slowly pour olive oil into food processor until combined.
Taste for seasoning and add more salt and pepper if necessary.
